Replacing refined carbohydrates with whole carbohydrates in combination with proteins works for one simple reason: blood glucose levels no longer rise and fall. On the standard American diet, sugars and flours are eaten as many as eight times per day. This makes glucose levels very unstable. The pancreas responds by releasing insulin to lower the glucose level. Usually, the insulin release is too much and glucose levels fall too far. In this case, the adrenal gland must release adrenalin to trigger the liver to move glucose from storage tissue back into the blood stream. When repeated many times daily, disaster results:

             •  The stomach walls come under attack. Candida, ulcers, and stomachaches result. The stomach walls 
               develop small holes which release partially digested food.

             •  These bits of food are chased down by the immune system which wears out, causing allergies and  
                 recurring infections.

             •  The pancreas is in constant demand to produce insulin. When it wears out, diabetes results. High insulin
                 levels may interfere with triglyceride break-down resulting in heart disease. The liver cannot regulate
                 cholesterol levels because it is busy releasing glucose.

             •  The brain releases certain brain chemicals to the degree that the receptors for these chemicals shut down
                 from overuse. Brain fog is experienced. Messages of well-being can no longer be received resulting in
                 mood swings, depression, anxiety, and anger.

             •  Eating disorders result from the fact that appetite receptors in the brain are shut down.

             •  The adrenalin gland wears out, resulting in fatigue. The malfunctioning adrenalin gland cannot produce  
                 many hormones, resulting in PMS. Since the adrenal gland also regulates salt levels, high blood pressure                  results. Another function of the adrenal gland is to regulate swelling. As it wears out, joint aches and
                 headaches
may result.
